Ingredients for Veal Loin With Celery

  • 3 pounds loin of veal, in 1 piece
  • 2 stalks celery, leaves removed, cut in halves
  • Seasonings to taste

Instructions

  1. Put loin of veal and seasonings in a roasting pan.
  2. Roast in moderate oven for 40 minutes.
  3. While veal is cooking, boil the celery halves in salted water for 35 minutes.
  4. Remove from water.
  5. Place celery around the veal in the roasting pan.
  6. Finish cooking together, about 10 minutes.
  7. Then serve.
