Ingredients for Taco Enchilada Casserole Recipe
- 1 pound ground beef
- 1 minced garlic clove
- 15 ounces tomato sauce
- 1 teaspoon ground cumin
- 12 corn tortillas
- Lettuce, shredded
- 1 fresh tomato, chopped
- 1 med. bell pepper, chopped
- 16 ounces pinto beans, drained
- 1 cup picante sauce
- 1/2 teaspoon salt
- 1 1/2 cups Monterey Jack or Cheddar cheese, shredded
- Sour cream
Instructions
- Preheat oven to 350 degrees.
- In a large skillet, stir together the meat, onion, pepper, and garlic. Brown and pour off excess fat.
- Stir in beans, tomato sauce, picante sauce, and seasonings. Simmer 15 minutes.
- Pour half of meat mixture into a casserole dish.
- Add a layer of tortillas.
- Top with remaining meat mixture and cheese.
- Cover with foil and bake for 20 minutes or until cheese is bubbly.
- Remove foil and top with lettuce, tomato, and sour cream.
