Ingredients for Taco Enchilada Casserole Recipe

  • 1 pound ground beef
  • 1 minced garlic clove
  • 15 ounces tomato sauce
  • 1 teaspoon ground cumin
  • 12 corn tortillas
  • Lettuce, shredded
  • 1 fresh tomato, chopped
  • 1 med. bell pepper, chopped
  • 16 ounces pinto beans, drained
  • 1 cup picante sauce
  • 1/2 teaspoon salt
  • 1 1/2 cups Monterey Jack or Cheddar cheese, shredded
  • Sour cream

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large skillet, stir together the meat, onion, pepper, and garlic. Brown and pour off excess fat.
  3. Stir in beans, tomato sauce, picante sauce, and seasonings. Simmer 15 minutes.
  4. Pour half of meat mixture into a casserole dish.
  5. Add a layer of tortillas.
  6. Top with remaining meat mixture and cheese.
  7. Cover with foil and bake for 20 minutes or until cheese is bubbly.
  8. Remove foil and top with lettuce, tomato, and sour cream.
