Ingredients for Squash Soup Recipe 1
- One cup of cold boiled squash
- 1 teaspoon salt
- 1 teaspoon sugar
- pepper
- mace
- 1 tablespoon of onion juice
- 2 tablespoons of celery, minced
- 1 quart hot milk
- pinch of baking soda
- 2 tablespoons of butter
- 1 tablespoon of flour
Instructions
- Run boiled squash run through a colander; beat into this salt, sugar, a little pepper and a pinch of mace, onion juice, and celery.
- Place this on the stove, stirring constantly until it becomes very hot.
- Have ready a quart of heated milk, with a pinch of soda.
- Stir butter and flour into the milk.
- Mix the hot squash and the milk well together in the tureen and serve.
Note: Turnip soup can be made in the same way.
