Spinach Soup Recipe

• 4 cups white stock
• 2 quarts spinach
• 3 cups boiling water
• 2 cups milk
• ¼ cup butter
• 1/3 cup flour
• Salt
• Pepper

1. Bring water to a boil an add powdered sugar and soda.
2. Wash, pick over, and cook spinach for thirty minutes in boiling water.
3. Drain, chop, and rub through sieve.
4. Add stock, heat to boiling-point, bind, and milk, and season with salt and pepper.
