Ingredients for Spinach Soup No. 2 Recipe

  • 1 pound spinach
  • 1 quart boiling water
  • 1½ ounces flour
  • ½ pint milk
  • 1½ ounces butter

Instructions

  1. Wash and pick the spinach; put it into the boiling water with a little salt.
  2. Boil with the lid off till the spinach is tender--about ten minutes.
  3. Run through a hair sieve.
  4. Melt the butter in a saucepan; stir in the flour and add the milk gradually.
  5. Cook for five minutes.
  6. Add the spinach puree.
  7. Boil.
  8. Season and serve.
