Ingredients for Spinach A La Reine

  • ½ tablespoon chopped onion
  • ½ tablespoon butter
  • 1 quart spinach
  • 1 tablespoon flour
  • 1 cup milk
  • Salt and pepper
  • 3-½ tablespoons grated cheese
  • 3 eggs
  • 6 cooked shrimps

Instructions

  1. Cook the onion in the butter or butter substitute, add the spinach, which has been washed and chopped, and fry quickly.
  2. Add flour and milk, and cook until it thickens.
  3. Season with salt and pepper, add grated cheese, and when it starts to boil remove from the fire and add well beaten egg whites, then the beaten yolks, and bake in a very hot for ten minutes.
  4. Garnish with the shrimps.
