Spanish Potatoes Recipe

Ingredients for Spanish Potatoes
- 1 tablespoon minced onion
- 2 tablespoons chopped green pepper
- 2 tablespoons chopped pimiento
- 4 tablespoons oil or drippings
- 2 cups cold boiled potatoes diced
- ½ cup cold cooked ham, chopped
- 1 teaspoon salt
- ½ teaspoon paprika
- Or
- Glazed Sweet Potatoes
- 6 sweet potatoes
- Salt and pepper
- Butter
- 1 cup brown sugar
- ¼ cup water
Instructions
- Boil the potatoes without paring them, and when tender, drain and strip off the skins.
- Make a thick syrup of the sugar and water.
- Cut each potato in half, dip it in the syrup, lay in a baking dish, season each piece with salt and pepper, a bit of butter.
- Bake in a quick oven until the potatoes are brown.
- They will brown quickly.
