Ingredients for Southern Chicken Soup Recipe

  • 1 3-lb. chicken
  • 2 qts. cold water
  • 3 tablespoons cooked rice
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon minced parsley

Instructions

  1. Cut all the meat from the chicken, reserving the breast whole.
  2. Cut the rest into bits, break the bones, and put them with the meat and salt water into the kettle.
  3. Place the breast on top of the other meat.
  4. Cook four hours.
  5. Remove the breast as soon as tender.
  6. Skim, often at first.
  7. Strain and add rice, breast cut in dice, seasonings, and parsley.
