Ingredients for Rechauffe

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 can mushrooms
  • 2 cups ground meat
  • Toast

Instructions

  1. Make a white sauce from fat, flour, milk and seasonings.
  2. Add mushrooms, cut in quarters, and the ground meet.
  3. Cover and set over low heat until thoroughly heated.
  4. Do not boil, as mushrooms are toughened by boiling.
  5. Serve on slices of buttered toast, garnished with parsley.
  6. This will serve six persons.
  7. Remnants of cold veal, lamb, chicken or game may be used, or, if there is not enough of one kind of meat, a combination of veal and chicken, lamb or game.
