Ingredients for Puffy Omelet Recipe
- 4 eggs, separated
- 2 tablespoons water
- 1 tablespoon butter
- Salt and pepper to taste
Instructions
- Beat yolks light and add water and seasoning (a pinch of baking powder added to the yolks will keep omelet from falling).
- Fold this into the well-beaten whites.
- Heat butter in a sauce pan until melted and add egg mixture.
- Cook until eggs are set.
- Grated cheese can be sprinkled when folded for platter.
- Always cut edges when ready to fold.
- This omelet may be served with minced bacon, parsley, thin slices of ham, or mushrooms.
