Potato Puff Recipe 2

Instructions

  1. 1 pint of hot mashed potatoes; 1/2 cup of hot milk or cream; 1 tablespoon of butter; 2 eggs; 1 tablespoon of chopped parsley; seasoning.
  2. Mash the potatoes light and fine.
  3. Add the seasoning.
  4. Heat the milk or cream and butter together, beat them well, and add to the potatoes.
  5. After cooling a little, stir in one egg.
  6. Then mould into small balls.
  7. Brush the rest of the egg over the balls, and brown them on a buttered tin.
  8. The parsley may be stirred in, or sprinkled over.
  9. Instead of moulding into balls, the mass of potato may be heaped up in a shallow bakingdish in irregular shape and browned for ten minutes.
  10. This will give it a puffy appearance.
  11. In the latter method it is well to beat the yolks and whites of the eggs separately.
