Ingredients for Pancakes A La Creme Recipe

  • 1/2 of a small, fresh lemon
  • 3-4 sugar lumps (more if needed)
  • Pinch of cinnamon
  • Pinch of salt
  • 1 oz. flour
  • 1 oz. butter
  • Splash of cold milk
  • 1/2 pint thick cream
  • 2 egg whites
  • 4 egg yolks

Instructions

  1. Rub the rind of the lemon with the lumps of sugar until the yellow part is all taken off, then crush the sugar to powder.
  2. Mix lemon-sugar with cinnamon, salt, and flour.
  3. Add cold milk and butter to make a smooth paste.
  4. Gradually stir in cream and the well-whisked egg yolks and whites.
  5. Fry the pancakes very quickly (3-4 minutes) on a greased griddle and serve them as hot as possible; cakes will be very thin.

Sufficient for four or five persons.
