Ingredients for Ox-tail Soup Recipe 1

  • 1 ox-tail
  • 1 qt. brown stock
  • 1 tablespoon salt
  • Few grains cayenne
  • 1 tablespoon flour
  • Water to cover

Instructions

  1. Wash and cut oxtail in small pieces.
  2. Dredge one-half of joints with flour, sprinkle with salt and pepper, and brown in hot fat.
  3. Add the rest and simmer until perfectly tender, in enough water to cover.
  4. Take out the browned joints and boil the rest to rags.
  5. Strain, cool, and remove the fat.
  6. Reheat this stock, add the brown stock, salt and pepper, and the reserved joints.
