Ingredients for Ox-tail Soup Recipe

  • 1 small ox-tail
  • 6 cups brown stock
  • 1/2 cup carrots, cut in fancy shapes
  • 1/2 cup turnips, cut in fancy shapes
  • 1/2 cup onion, cut in small pieces
  • 1/2 cup celery, cut in small pieces
  • 1/2 teaspoon salt
  • Dash of salt and pepper
  • 1 tablespoon flour
  • Few grains cayenne
  • 1/4 cup Madeira wine
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon lemon juice
  • 1 tablespoon butter

Instructions

  1. Cut ox-tail in small pieces. Wash, drain, sprinkle with salt and pepper, dredge with flour, and fry in butter ten minutes.
  2. Add to brown stock and simmer one hour.
  3. Then add vegetables, which have been parboiled twenty minutes.
  4. Simmer until vegetables are soft and add salt, cayenne, wine, Worcestershire sauce, and lemon juice.
