Ingredients for Orange Marmalade Sauce Recipe

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1/3 teaspoon salt
  • Slight dusting of paprika
  • 1 cup of rich brown stock
  • 1 gill of sherry and three tablespoons of Scotch marmalade, if desired

Instructions

  1. Put the butter, flour, salt, and slight dusting of paprika into a saucepan.
  2. When brown, slowly add rich brown stock and cook and stir until thick and smooth.
  3. Add, if liked, a gill of sherry and three tablespoons of Scotch marmalade, and beat hard until the marmalade is entirely and smoothly blended with the sauce.
  4. This sauce is particularly suitable to serve with quail and with grouse.
