Ingredients for Onion Omelet Recipe

  • 6 eggs
  • 1 large Spanish onion
  • 1 tablespoon butter
  • A pinch of salt and a dash of pepper
  • Finely minced parsley to taste

Instructions

  1. Dice the onion and fry it in a spoonful of butter until tender, stirring it often.
  2. Do not let it brown.
  3. Take a small amount of salt and a dash of pepper and beat them into the yolks of the eggs.
  4. Proceed as in directions for a plain omelet, folding in the whites of the eggs.
  5. When it is nearly cooked, sprinkle over the top a teaspoon of finely minced parsley.
  6. Cook in two omelets.
  7. Serve with it French fried, Lyonnaise, or baked potatoes with a cream sauce.
