Mushroom And Lobster Sandwich Recipe

For each sandwich:

• 2 slices of buttered bread
• 2 tablespoons meat of cold boiled lobster, chopped
• 4 small cooked mushrooms
• 1 tablespoon mayonnaise dressing

For mayonnaise dressing combine the following in a blender on high speed:

• 1 teaspoon of pepper
• 2 teaspoons of mustard
• 1 teaspoon of salt
• 2 egg yolks
• ½ tablespoon of vinegar
• 1.5 cups of olive oil

If the mixture becomes too thick, thin it with a little more vinegar. Mayonnaise should be stiff enough to hold its shape. If any curdling or separation occurs, the mayonaise can be reblended with an additional egg yolk.

1. Chop the mushrooms very fine and mix with the chopped lobster and mayonnaise sauce.
2. Spread on both slices of bread, put together and press lightly.
