Instructions

  1. Buy a pound of beef from the lower round.
  2. Chop it fine and add two or three crackers, ground fine or rolled, a slice et onion and two stalks of celery, both chopped, salt, pepper and a scant quarter of a teaspoon of poultry dressing.
  3. Beat this well together and form into an egg- shaped loaf.
  4. Place this in a meat-pan brush it over with melted butter, dredge with flour and salt and roast in a hot oven, basting occasionally, for half or three-quarters of an hour.
  5. To this may be added bits of cold steak or corned beef, chopped fine, but if cooked meat is used, add the yolk of an egg to bind it together.
  6. Make a rich brown gravy to serve with it.
