Ingredients for Mayonnaise Dressing Recipe 4

  • 3 egg yolks
  • 1 teaspoon salt
  • 1/2 teaspoon mustard
  • 1/8 teaspoon pepper
  • 1/4 teaspoon powdered sugar
  • 2 cups olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon vinegar

Instructions

  1. Mix the dry ingredients and add the egg yolks.
  2. When well mixed, add 1/2 teaspoon vinegar.
  3. Using an egg beater, beat until smooth. Then add, drop by drop, 2 cups of oil, beating constantly.
  4. As the mixture thickens, thin with lemon juice or vinegar; add more oil, alternating with the vinegar and lemon until the proportions are used, stirring or beating constantly.
  5. If oil is added too rapidly the dressing will curdle. In this case, take a fresh, cold yolk, beat until thick, and add the curdled mixture slowly to it.
  6. The oil, for salad dressing, should be thoroughly chilled and all utensils and ingredients should also be cold. It is helpful to place the bowl in a larger dish of cracked ice.
  7. Mayonnaise should be stiff enough to hold its shape.
  8. The size of the eggs and the sharpness of the vinegar are so variable that the sauce made with 2 cups of oil may vary at different times.
