Ingredients for Lemon Meringue Pie Recipe
- 4 tablespoons lemon juice
- 2 tablespoons flour
- 1 cup sugar
- Pinch of salt
- 1 teaspoon grated lemon rind
- 2 tablespoons cornstarch
- 2 cups water, boiling
- 1/2 cup cold water
- 3 eggs, separated
- 3 tablespoons sugar
- Pastry pie crust
Instructions
- Line pie plate with pie crust and bake for 10 minutes at 350 degrees until crust is a light brown.
- Mix cornstarch, flour, sugar and salt together and add cold water.
- Mix until smooth.
- Add egg yolks, mix well, and add slowly the boiling water.
- Cook for about 5 minutes, stirring constantly.
- Add lemon juice and rind.
- Pour mixture into baked pie crust.
- Beat the egg whites with 3 tablespoons of sugar and beat stiff to form a meringue.
- Spread thickly over top of pie.
- Dust with a little sugar.
- Brown in very slow oven (150-225 degrees).
