Gumbo Filee Soup Recipe

Ingredients for Gumbo Filee Soup Recipe
- 1 quart okra
- 1 whole chicken, cut into pieces
- 1/4 pound lean ham
- 1 sliced onion
- 4 tablespoons olive oil
- 50 oysters
- 1 tablespoon filee powder
- Salt
- Pepper
Instructions
- Wash and slice the okra, cook in a pint of water until tender.
- While the okra is cooking, cut the chicken into pieces and chop 1/4 pound lean ham.
- Cook a sliced onion in olive oil until brown, add the chicken and ham, and stir until the chicken is slightly browned
- Add a pint boiling water and simmer until the chicken is perfectly tender.
- At serving time, mix the okra (gumbo) with the chicken; add 50 oysters, drained; bring quickly to a boil.
- Moisten the filee powder in a little of the soup, stir it into the whole, and serve.
- Do not let the soup boil after adding the powder.
- Salt and pepper to taste.
