Ingredients for Green Corn Omelet Recipe

  • 4 good-sized ears of corn
  • 5 eggs
  • 2 tablespoons cream
  • 1/4 teaspoon salt
  • Dash of pepper
  • 1 tablespoon butter

Instructions

  1. Slice corn lengthwise and scrape out the pulp.
  2. Beat the eggs, keeping the yolks and whites separate.
  3. Mix together the corn, cream, egg yolks, and seasoning. Beat briskly for 1-2 minutes.
  4. Heat the butter in an omelet pan.
  5. Add the stiffly beaten egg whites to the other ingredients, folding them in lightly.
  6. Pour mixture into the omelet pan and cook as any omelet, raising the center with a broad knife and tipping the pan to let the uncooked parts reach the hot pan.
  7. When nicely browned and evenly cooked, fold over and serve at once.
