Ingredients for Green Corn Omelet Recipe
- 4 good-sized ears of corn
- 5 eggs
- 2 tablespoons cream
- 1/4 teaspoon salt
- Dash of pepper
- 1 tablespoon butter
Instructions
- Slice corn lengthwise and scrape out the pulp.
- Beat the eggs, keeping the yolks and whites separate.
- Mix together the corn, cream, egg yolks, and seasoning. Beat briskly for 1-2 minutes.
- Heat the butter in an omelet pan.
- Add the stiffly beaten egg whites to the other ingredients, folding them in lightly.
- Pour mixture into the omelet pan and cook as any omelet, raising the center with a broad knife and tipping the pan to let the uncooked parts reach the hot pan.
- When nicely browned and evenly cooked, fold over and serve at once.
