The following are two Fourth of July recipes that will put together an impressive menu for your celebration. Not only are these dishes tasty and gorgeous, they're easy too! Both can be prepared ahead of time in under 20 minutes each, leaving you free to enjoy your guests until it's time to do the actual cooking. Once these beauties hit the table, you'll be awash in compliments – and who doesn't love that?
Grilled Salmon in a Pouch
The summertime heat in July can be a killer and your guests might not want to indulge in heavy red meat when the temperatures hit the roof. Why not present them with something a little lighter but still delicious? Salmon makes a great grilled dish that everyone will love, and cooking it in a pouch will prevent it from drying out or falling through the grill grate.
For this recipe, you'll need a roll of parchment and a stapler, though if you don't have parchment, aluminum foil will work just fine.
Ingredients
1 two-pound salmon fillet, deboned
6 sprigs of fresh thyme
Freshly ground white pepper
Sea salt
Instructions
- Preheat grill.
- Rinse salmon and rub with thyme sprigs.
- Season lightly on front and back with pepper and sea salt.
- Scatter thyme sprigs over top of salmon.
- Place salmon on a large piece of parchment, skin side down, then wrap up the ends of the paper like a bag and staple them. The shape doesn't matter as much as the fact that the pouch is completely sealed.
- Grill for about 15 minutes, checking to make sure the fish is cooked through.
- Once done, remove from heat and let rest for about five minutes.
- Serve on a festive platter!
Independence Day Parfaits
A festive dessert is a must for any holiday party. If you're looking for something other than the traditional flag cake, parfaits are both an easy and attractive finish to your meal. And with a huge helping of fruit piled inside, they're almost verging on healthy!
For this dessert, you'll want to use glass dessert bowls so that you can see the red, white, and blue striping through the dish. In a pinch, wine glasses will work and make for a great presentation.
Ingredients
- 1 package of vanilla pudding mix, prepared
- 1/2 cup each of blueberries and strawberry slices
- Whipped cream
Ingredients
- In four transparent dessert dishes, sprinkle in a half-inch layer of blueberries, then layer with one-inch of vanilla pudding.
- Sprinkle the pudding with a half-inch layer of strawberry slices and layer with another one-inch layer of pudding.
- Keep alternating pudding layers with blueberries and strawberries until the glass is full, then sprinkle a few of both fruits on top for a festive finish.
- Refrigerate for at least three hours before serving.
- Serve chilled through and topped with whipped cream.
