Ingredients for Eggs With Tomatoes Recipe
- 3 tablespoons vegetable shortening
- 4 even-sized tomatoes
- 8 rounds buttered toast
- 3 eggs
- 2 tablespoons cream
- 1 tablespoon chopped pimiento
- Salt and pepper to taste
- Parsley
Instructions
- Remove stems from tomatoes and cut each in halves crossways. Remove cores and fry lightly in two tablespoons vegetable shortening.
- Cut rounds of buttered toast a little larger than the tomatoes.
- Beat eggs in a small saucepan. Add cream, pimientos, rest of vegetable shortening, seasonings, and stir over heat until creamy and setting.
- Place each half tomato on a round of toast. Pour even amounts of egg mixture into tomatoes and garnish with parsley.
- Serve hot.
