Ingredients for Egg Croquettes Recipe

  • 6 whole eggs
  • 3 egg yolks
  • 2 tablespoons butter
  • 1 slice onion
  • 1/3 cup flour
  • 1 cup white stock
  • Salt
  • Pepper
  • Stale bread crumbs
  • Grated cheese

Instructions

  1. Poach eggs and dry them on a towel.
  2. Cook butter with onion for 3 minutes.
  3. Add flour and, gradually, stock.
  4. Season with salt and pepper; then add yolks of eggs slightly beaten.
  5. Cook for 1 minute and cool.
  6. Cover eggs with mixture and roll in bread crumbs and cheese.
  7. Using equal parts, dip in egg, again roll in crumbs, fry in deep fat, and drain on brown paper.
  8. These may be served with a thin sauce, using equal parts of white stock and cream, and seasoning with grated cheese, salt, and paprika.
