Easy Chocolate Pudding

Pudding from a box usually tastes more like the box than chocolate. This recipe will get you 4 servings of deep, rich chocolate flavor in about the same amount of time that a box pudding takes to cook.

Ingredients

  • ½ cup packed brown sugar, dark if you have it
  • 2 tablespoons of sugar
  • ¼ cup unsweetened cocoa
  • 2 tablespoons cornstarch
  • ¼ tablespoon salt
  • 2 cups milk
  • 4 ounces of semi-sweet or bittersweet chocolate chopped
  • 1 teaspoon of vanilla

Instructions

  1. In a large saucepan mix together the sugar, brown sugar, cornstarch, and salt.
  2. If you are using a non-stick pan you should use a rubber spatula to combine them.
  3. Once everything is combined add 1 cup of the milk and the chocolate and whisk slowly over a medium heat until the chocolate is melted and smooth.
  4. Add the remaining milk and cook until large bubbles form and pop on the surface.
  5. Remove the pan from the heat and whisk in the vanilla.
  6. Pour the pudding into four bowls and let it come to room temperature.
  7. At this point you can either serve the pudding or cover it with plastic wrap, making sure the wrap is touching the surface of the pudding to prevent a skin from forming, and refrigerate until cool.

Chocolate Mousse

Ingredients

  • 4 ounces of semi-sweet or bittersweet chocolate chopped
  • ¼ cup of cream
  • ¼ cup of sugar
  • 4 eggs separated
  • A pinch of salt

Instructions

  1. Using a Bain Marie and low heat melt the chocolate and cream together.
  2. You can make a Bain Marie by placing bowl over a pot that has water in it. The water #should not touch the bottom of the bowl and the bowl should fit snug on the pot.
  3. Once the chocolate has melted add half the sugar and whisk until the sugar is dissolved.
  4. Add the rest of the sugar and stir with the whisk until the sugar is dissolved.
  5. Remove the chocolate form the heat.
  6. Add the yolks one at a time stirring until they are well blended with the chocolate.
  7. Using your stand mixer beat the egg whites and salt until it reaches stiff peaks.
  8. Fold one third of the chocolate into the whites until it is completely incorporated.
  9. Add another third of the chocolate and fold it into the whites.
  10. Add the remaining third of the chocolate and fold it into the whites.
  11. Once the mousse is completely mixed fill four martini glasses with the mousse.
  12. Refrigerate for at least an hour.
  13. Serve cold.
