Ingredients for Dads Beef Chop Suey Recipe

  • Fresh Ginger, minced
  • Garlic, minced, fresh or bottled
  • Lean beef roast, cubed
  • Fire Oil, or oil of your choice, about 2 TB
  • Soy Sauce, a few good squirts, or to taste
  • Celery, 3 ribs
  • Onion, 1 med
  • Bell Pepper, 1 large
  • Green Onions (Scallions) 1 bundle
  • Carrots, 3
  • Bean Sprouts, canned or fresh
  • Water Chestnuts, canned or fresh
  • Bamboo Shoots, canned or fresh
  • Baby Corn, canned or fresh
  • Snow peas, fresh or frozen
  • Mushrooms, canned, fresh or dried- to taste
  • 4 packages (+/or -) of brown gravy mix

Instructions

  1. Fry ginger and garlic, in wok (or large skillet) in HOT fire oil for a couple of minutes, or until they start to turn brown.
  2. Toss in beef and sear.
  3. Add soy sauce, cook until meat is done.
  4. Chop all veggies about the same size, omit what you don't like, it still turns out great.
  5. Add veggies, one at a time, starting with celery, then bell pepper, then onions.
  6. Add DRAINED canned veggies last.
  7. Add more soy sauce as needed to keep from burning, the veggies will put off their own juices, so it should not get dry.
  8. Stir fry until hot all the way through.
  9. Turn off heat and cover.
  10. Gravy, make as package directions, but omit 1 cup of water, the juices in your stir fry mixture count.
  11. Serve with rice and hot chow mein noodles, we use prepackaged, heat in microwave for 1 minute.
