Ingredients for Currant And Corn Muffins Recipe
- 1½ cups flour
- 1 cup cornmeal
- 3 eggs, beaten
- 5 teaspoons baking powder
- ½ cup sugar
- ½ cup shortening
- ¾ cup currants, floured
- 1 teaspoon salt
- ¾ cup milk, scalded
Instructions
- Cream the shortening.
- Add sugar, beaten eggs, milk, cornmeal, flour, salt and baking powder, and then the currants.
- Mix well.
- Drop in greased muffin tins.
- Bake in hot oven for 20 minutes.
