Ingredients for Creamed Ham With Poached Eggs Recipe 1

  • 3/4 cup milk
  • 1/2 stalk of celery
  • 1 slice of onion
  • 1 1/2 tablespoon butter
  • 1 1/2 tablespoon flour
  • 3/4 cups of fine-chopped ham (cold, boiled)
  • 4 rounds of toast
  • 1 cup boiling, salted water
  • 1/2 tablespoon butter

Instructions

  1. Put milk, celery, and onion in a double boiler and let cook fifteen minutes.
  2. Pick out the celery and onion and stir in butter and flour, creamed together.
  3. Stir until the mixture thickens, then cover and let cook ten minutes.
  4. Stir in ham and let it stand until it becomes very hot.
  5. Dip the toast edges in boiling salted water and set them on a hot serving dish. Spread toast lightly with butter and then with the ham mixture.
  6. Finish with a carefully poached egg above the ham.
