Creamed Cabbage Recipe 1

Instructions

  1. Thoroughly cleanse two young cabbages, and boil them until quite soft.
  2. Take them out, drain, and press them between two hot plates until they are dry, when they may be slightly chopped.
  3. Melt a piece of butter the size of an egg in a stewpan, add pepper and salt, then put in the cabbage, and turn it about for two or three minutes.
  4. When it is thoroughly heated, dredge 1 tablespoon of flour over it, and mix with it very gradually a cup of milk or cream.
  5. Serve on a hot dish.
  6. Time, half an hour.
  7. Sufficient for three or four persons.
