Ingredients for Cream Of Pea Soup Recipe 1
- 1 can of peas, drained
- Enough water to cover peas
- 1 pint of water
- 1 teaspoon of sugar
- 1 teaspoon of butter
- 1 teaspoon of flour
- 1 pint of rich milk
Instructions
- Pour enough water over the peas to cover them well. Let the peas soak for half an hour, then drain.
- Put the peas in a saucepan with a pint of water and boil until they become soft.
- Rub through a colander and add the sugar.
- In another saucepan, cook butter with flour.
- Pour in a pint of rich milk and, when it is thickened, add the pea puree.
- Cook for a minute, season to taste, the turn into a heated tureen.
- Drop a handful of dice of fried bread on the soup just before serving.
