Ingredients for Cornmeal Drop Cakes Recipe

  • 1 pint meal
  • ½ teaspoon salt
  • 1 cup hot water
  • 1 tablespoon vegetable shortening
  • 2 eggs, beaten separately

Instructions

  1. Heat salt and vegetable shortening until melted.
  2. Add all remaining ingredients but the eggs.
  3. When cool, add beaten egg yolks.
  4. If too thick, add a little more milk or water.
  5. Add stiffly beaten whites last.
  6. Drop with spoon on greased hot griddle and cook on one side until brown . Turn and cook on other side until cooked through.
