Ingredients for Corn And Egg Plant Recipe
  • 4 ears corn, cleaned
  • 1 egg plant, small, peeled, diced
  • 4 tablespoons butter
  • Flour
  • Seasonings to taste

Instructions
  1. Boil the corn in salted water for about 20 minutes.
  2. Remove from water.
  3. Scrape corn from cobs.
  4. While the corn is cooking, peel and dice the egg plant Season and dredge in flour.
  5. Fry quickly in the butter in a frying pan for about 3 minutes.
  6. Add the corn, mix well, and serve.
