Southwestern Cold Avocado and Cilantro Soup

This cold soup is amazingly refreshing on days when you don’t want to cook. This hearty, yet light, meal will please your whole family – with no sweating required!

Serves four as a side or two as a light entrée.

Ingredients

  • 4 avocados, peeled
  • 1 shallot, chopped
  • 3-1/2 cups vegetable or chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon of your favorite hot sauce
  • 1 tablespoon lime juice
  • 2 tablespoons chopped fresh cilantro
  • Sea salt
  • Freshly ground black pepper
  • Sour cream to garnish
  • Cilantro for garnish
  • Tortilla chips

Instructions

  1. In food processor, combine avocado, shallot, broth, tomato paste, hot sauce, lime juice and cilantro, processing until smooth.
  2. Season with sea salt and black pepper.
  3. Refrigerate for 3 hours before serving.
  4. Serve in chilled bowls, topped with a tablespoon of sour cream and a sprinkling of cilantro.

Cold Corn Salad with Sea Salt

Cool summer recipes don't get better than this refreshing corn salad. Quick and easy to prepare, you'll have this dish on the table in less than 15 minutes.

Serves four as a side, or two as a light entrée.

Ingredients

Avocados make a great summer ingredient.
  • 1 24 ounce bag of frozen corn, defrosted and drained
  • 1 cup diced cucumbers
  • 1/4 cup diced onion
  • 2 cloves garlic, chopped
  • 2 small tomatoes, chopped
  • 4 tablespoons mayonnaise
  • 4 tablespoons sour cream
  • 4 tablespoons Dijon or yellow mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon white vinegar
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon celery salt

Instructions

  1. In a large mixing bowl, combine corn, cucumbers, onions, garlic, and tomatoes.
  2. Blend mayo, sour cream, and mustard together and then mix into vegetables.
  3. Add remaining ingredients and fold gently.
  4. Season with more salt and pepper to taste.
  5. Chill for two hours before serving and serve in a pretty summer dish.

Cool Summer Carrot and Raisin Salad

This easy summer recipe is both sweet and savory. Its light texture won't weigh you down, while the cool of the mayo will have you refreshed after a warm day of hard work or fun in the sun.

Served about 6 as a side or two as a main dish.

Ingredients

  • 2 cups shredded carrots
  • 1/2 cup raisins
  • 4 tablespoons sesame seeds
  • 1 teaspoon grated onion
  • 1/4 teaspoon pressed garlic
  • 1/4 cup mayonnaise or aioli
  • 2 cups shredded lettuce
  • Sea salt
  • Freshly ground black pepper

Instructions

  1. In a large mixing bowl, combine carrots, raisins, and sesame seeds.
  2. Add in onion and garlic, mix together.
  3. Fold in mayonnaise or aioli.
  4. Serve over shredded lettuce, sprinkling lightly with sea salt and black pepper for additional flavor.
