- Three eggs, beaten separately; one and one-half cups granulated sugar, one- half cup butter, three-quarters cup sweet milk, two and one-half cups flour, one teaspoon cream of tartar, one-half teaspoon soda, and two squares of chocolate.
- To the chocolate add one-half the milk and stir over a slow fire until thoroughly dissolved; add one-half cup of sugar, and stir until thoroughly mixed; then set aside to cool.
- Sift flour once, then measure, add soda, and sift three times; cream butter and the remainder of the sugar thoroughly; beat yolks to a stiff froth and stir in; whip whites to a foam, add cream of tartar and whip until stiff; add the remainder of the milk to the chocolate, and stir until thoroughly mixed; add this mixture to the creamed butter, sugar and egg yolks, then the flour and stir hard; beat in the whites of the eggs and bake in a slow oven forty-five minutes.
