Chicken and Oysters a la Metropole Recipe

• ¼ cup butter
• ¼ cup flour
• ½ teaspoon salt
• 1/8 teaspoon pepper
• 2 cups cream
• 2 cups cold cooked chicken, diced
• 1 pint oysters, cleaned and drained
• 1/3 cup finely chopped celery

1. Combine first five ingredients over low heat; stir until heated through. Add chicken and oysters; cook over low heat until oysters are plump.
2. Serve sprinkled with celery.
