Ingredients for Chicken Fricassee Recipe

  • 1 chicken
  • 1 tablespoon butter
  • 1 teaspoon lemon juice
  • ½ teaspoon celery salt
  • 2 tablespoons flour
  • 1 cup cream
  • 1 egg
  • ¼ teaspoon pepper

Instructions

  1. Cut the chicken into serving pieces.
  2. Wipe each piece, sprinkle with salt and pepper, and roll in flour.
  3. Melt butter in a pan, and brown the chicken pieces.
  4. Add boiling water to cover and simmer for 40 minutes.
  5. Remove the chicken, reduce the stock to 1 pint, and set aside.
  6. For the sauce, melt butter, add flour and seasonings, and cook over low heat. Add the reserved broth and lemon juice, a little at a time, and cook until smooth.
  7. Add the scalded cream and stir. Pour this mixture slowly over the beaten egg and stir well.
  8. Arrange the pieces of chicken on a hot platter and garnish with toast points.
  9. Pour the hot sauce over the top.
