Ingredients for Cheese Canapes Recipe 2

  • 8 croutes bread
  • ¼ pound cheese
  • 2 tablespoons vegetable shortening
  • Salt and red pepper to taste
  • 1 teaspoon mustard
  • 1 teaspoon sherry

Instructions

  1. Cut the croutes of bread out of slices of stale bread with a round cutter 2 inches across.
  2. Fry the bread a golden color in hot vegetable shortening.
  3. Cut up cheese; put it into a mortar with vegetable shortening, and pound until it becomes a smooth paste; season with salt and red pepper to taste.
  4. Add the mustard and sherry.
  5. When all ingredients are thoroughly mixed, spread evenly on the croutes of bread; place them in oven and heat thoroughly.
  6. Serve immediately.
