Unlike the red queen's explanation in Alice in Wonderland, this soup is not made from a creature called a mock turtle. It was a less expensive version of popular green turtle soups that recreated the somewhat gelatinous nature of the original. Mock turtle soups use calves heads or oxtail as the basis for their broths.
