Sandwiches Don't Have to Mean Meat
With so many options for meatless sandwich recipes, there are plenty of reasons to keep meat why you might be not eating meat. Perhaps you are a vegetarian. Or your religion requires you to avoid meat periodically. Maybe you just want to cut back on the amount of 'animal product' you consume, or are concerned about cholesterol.
Whatever the case, cutting back on meat doesn't have to mean cutting back on sandwiches. These staples of bag-lunches and quick meals are still available to you with these meatless sandwich recipes.
Meatless Sandwich Recipes Can Be Protein Substitutes
If you're avoiding meat, but still want protein, base a sandwich on other protein sources, such as cheese, eggs, tofu or even nuts (be warned, however - nuts are high in fat).
If you want something light at midday, an all-veggie sandwich will fill you up and not leave you as lethargic in the afternoon as a meat-inclusive lunch may. Try slicing cucumber the long way to make sandwich slabs, or pair crispy greens such as lettuce or endive with a softer veggie such as tomato.
Use Your Noodle
Use your food processor to make a puree or paste to spread on bread. Try noodles or rice combined with raisins and curry to spread on toasted pita bread. Or puree chickpeas and add fresh mint and sesame oil for a middle-eastern treat.
Be inventive and creative with the bread for your sandwich, as well as the filling. Dense pumpernickel bread will add whallop to a sour-cream based filling. Sourdough loves fruity fillings. Most groceries now stock a wide variety of specialty breads, full of flavor and in textures that will complement any meatless sandwich recipe.
