Before refigeration and preservatives, making jam recipes at home was the only way to enjoy the sweet taste of fruit during the winter months. Now that fresh fruit can be imported from warmer climates year-round, jam recipes have become a cupboard regular and breakfast staple, rather than a dietary necessity.
Jam Versus Jelly
In the United States, jelly is a jam that has had all the fruit bits filtered out, making the spread clear. Jam is unfiltered, opaque, and often contains bits of mashed fruit.
With or Without Pectin?
Simply put, jam is fruit that has been boiled with sugar. Many fruits, notably harder fruits like apples, pears, and oranges, will produce a gel when boiled with sugar. Softer fruits lack sufficient pectin to gel on their own, requiring that commercial pectin be added. While jam recipes may suggest which fruits need pectin or how much sugar various fruits require to be both thick and tasty, you will learn how to experiment with proportions, ingredients, and different fruits as you make your own jams.
