While ice cream is one of the most popular frozen desserts, lighter and easier-to-make ice recipes are gradually gaining favoritism. There are several terms that refer to ice, including Italian ice, slush, and granita. Simply put, an ice dessert is frozen flavored water or juice, usually with a bit of a grainy texture that makes it easier to scoop. Ices should not be confused with shaved ice treats such as snow cones. With shaved ice concoctions, the juice or syrup is added at the end, whereas with a frozen ice it is added prior to freezing. Because most ice recipes do not use cream or milk, they are healthier than ice creams, particularly if little sugar is used.

Making ice recipes may seem like a simple task, but to create the final granular texture and appropriate consistency some attention does need to be paid to the recommended techniques. Use one part sugar to four parts liquid (juice and water combined – some recipes may also use coffee or other beverages): a higher concentration of sugar will affect how the ice freezes. If alcohol is going to be one of the ingredients, it should be added after the base mixture is frozen. If using fruit juice, be sure there is no pulp or rind. To create the granular texture, stir the mixture periodically while freezing. Ice is ready to serve when it is solid at the edges and still soft in the middle, though if it freezes too solid to scoop, it can be melted slightly, scraped, or grated for easier serving.
