A venerable summer treat, float recipes come in many flavors. The most popular variation is the root beer float, made with tangy root beer mixed with smooth vanilla ice cream that creates a delicious froth. Simply put, a float is any beverage with ice cream floating in it, and the combinations are nearly endless.
Also called ice cream sodas, floats have been popular desserts for over a century. There is no confirmed record of the first float recipes, though Frank Wisner is said to have been inspired to first use root beer in August 1893. Decades ago, floats were made with a variety of flavored syrups with fizz added through seltzer water, but the prevalence of modern carbonated beverages simplifies most recipes.
Today, floats can be made with different varieties of soda and different flavors of ice cream to suit any taste. Float recipes also use non-carbonated beverages such as juice and milk, though the key to a float is that when served, the ice cream has not yet melted.
Tips to Keep Your Float Recipes Floating
The key to a tasty float is the ice cream: it should still be solid when the soda is added, though the combination of the two blends the flavors into a delightful slush. To make perfect floats, consider chilling the glass for fifteen minutes prior to beginning – this prevents the ice cream from melting as soon as it makes contact with the serving dish. Add the ice cream to the glass first if you prefer a very frothy float, or reserve some ice cream to add last for less froth. Floats may be garnished with whipped cream, chocolate syrup, or other traditional sundae toppings, if desired. Most importantly, always serve a float with both a long spoon and a straw so no drop of deliciousness is missed.
