Types of Exotic Meat Recipes

Oxtail recipes are made from the tails of, well, ox. They can also come from any beef animal. This thick and chewy meat is most often used in soup stocks since it’s take a long time to cook. Searing and simmering the oxtail for several hours is the most common way to prepare it. Though not as popular in the United States, oxtail is used a lot in Europe and Asia.
Tripe Recipes
Did you know cows have two stomachs? They do, and that’s exactly what you’ll use in a tripe recipe. It’s not only a delicacy, it’s also a lot of work. Tripe should be washed before it’s sold and you’ll want to wash it again with kosher salt and vinegar, then soap and water before using it. It can also spoil quickly, so don’t buy it until you are ready to use it. Even after washing it several times, tripe’s odor is still hard to mask. That’s one of the reasons this exotic meat recipe uses so many spices—it makes it more palatable and eliminates the unfortunate scent.
Tongue Recipes
Tongue comes from a cow or, sometimes, veal. Though it’s an acquired taste, many enthusiasts swear by it. Tongue recipes are versatile and can be made in many different dishes.
Though many people may avoid exotic meat recipes, these meals utilize some of the lesser-used parts of the animal, creating less waste from the animal. .
