Cabbage Recipes Over the Centuries
There was a time when cabbage recipes were actually used to prevent drunkenness. Ancient Romans and Egyptians believed that eating cabbage before partying could prevent one from getting too drunk. In some cases, the cabbage was used the morning after to get rid of headaches and other ill-effects of alcohol.
For centuries, the Chinese have dried and kept their cabbage for the winter, to be used in other recipes since it keeps well, while parts of Europe have pickled their cabbage since the 18th century.
Other parts of Europe are known for their stuffed cabbage recipes. If you didn’t grow up eating this, you probably don’t have a high opinion of the dish. These meals give off an unfortunate odor while they are being cooked. After the meal, diners may give off their own unfortunate odor as well.
In the United States, most people today are familiar with cabbage recipes like cole slaw and sauerkraut. Although these use plenty of cabbage, the other seasonings and ingredients take over somewhat, making the cabbage just one ingredient in the larger recipe.
The Cabbage Soup Diet
Perhaps the biggest drain on cabbage’s reputation is the cabbage soup diet. Following a cabbage soup diet is supposed to help the dieter lose up to 10 pounds in a week. The theory is simple enough—drink lots of cabbage-based soup, which also may contain onions and celery depending on the recipe, several times a day for a week. As the days go by, some low calorie fruits and vegetables can be added in. The combination of low calories and the high fiber make you lose weight, but it’s really not far from fasting. Some nutritionists believe the weight loss is from water weight, which will easily come back after resuming normal meals.
