Ingredients for Brown Sugar Frosting

  • 1 cup brown sugar
  • ½ cup water
  • 2 egg whites
  • 1 teaspoon vanilla or½ teaspoon lemon extract

Instructions

  1. Make a syrup of the sugar and water and cook to the softball stage (238 degrees F.).
  2. Remove from the fire and cool while the egg whites are beaten, then pour the syrup in a thin stream on to the stiff whites, beating the mixture constantly until thick enough to spread.
  3. Add the flavoring.
  4. Chopped nuts may be stirred into the frosting just before spreading.
