Ingredients for Braised Duck With Turnips Recipe
- 2 carrots
- 2 stalks celery
- 2 turnips
- 1 onion in large pieces
- 4 slices ham
- 1 duck trussed for roasting
- 1 bunch parsley
- 2 cups water
- Pinch of nutmeg
- Pepper
- Salt
- 3 tablespoons vegetable shortening
- 1 dozen small peeled turnips
Instructions
- Wash and cut the vegetables (except for the dozen turnips) and put them in a pan
- On top of the vegetables, place the ham, then the duck, herbs and seasonings
- Add water
- Lay parchment or greased paper over top, then lid, and simmer 1 hour or till duck is tender.
- Melt vegetable shortening in a pan, add the and toss until they are golden color.
- When duck is cooked, remove strings and skewers.
- Put on a hot dish, and arrange turnips around the duck.
- Season gravy and strain over duck.
