Boiled Leg Of Mutton Recipe

Instructions

  1. Trim off the outer skin and fat, wipe and put the leg into boiling salted water.
  2. When the scum begins to form, skim it.
  3. Boil slowly or simmer ten minutes to each pound of meat if it is mutton; fifteen minutes for lamb.
  4. Serve with caper sauce and currant jelly.
  5. Garnish the joint with parsley.
