Ingredients for Bisquick Muffins Recipe

  • 2 cups Bisquick mix
  • 1 1/4 cups milk
  • 2 eggs
  • 1/4 cup rice flour
  • 1/4 cup tapioca flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, stir together the Bisquick mix, milk, and eggs until a batter is formed.
  3. Add flours, sugar, xanthan gum, and baking powder until mixed well.
  4. Pour in blueberries and fold in gently.
  5. Put in the oven and bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

Note: xanthan gum, rice flour, and tapioca flour can be found in the organic section of most grocery stores.
