Beefsteak With Mushrooms Recipe

Instructions
- Before putting the steak on to broil, prepare the mushrooms.
- If canned, open and turn them out of the can; 1/2 a can will be sufficient for an ordinary-sized steak.
- Cut the mushrooms in two, and saute them in a tablespoon of butter in a frying-pan.
- Add 1/2 cup of bouillon or clear stock and let them simmer for ten minutes.
- Not having the bouillon or stock at hand, use boiling water with half a teaspoon of beef extract, well-seasoned with salt, paprika, and a teaspoon of lemon juice.
- Broil the steak over a clear fire, dish it on a hot platter, pour the mushrooms and gravy around it, cover, and let it stand in a hot oven not over three minutes, and serve.
